Voghera golden onions

Voghera golden onions are planted in winter and spring and have an intense golden colour. The onions, planted in rotation, were cultivated in the area of Voghera in the 19th century. Its seeds gave birth to the “golden Parma”, known as “Pavesa”. Its rediscovery began in the 1990s, thanks to the Voghera Golden Onion Producers Consortium and the various establishments specialised in its packaging. Samples are stored in the seed bank at the plant germplasm in the University of Pavia. Voghera golden onions are characterised by a high pungency and excellent preservability and can be used in sautéed vegetables, gratins, onion rings, soups, focaccias or eaten raw in salads.
